2015 Sidewood Sparkling "Chloe" Cuvée - Adelaide Hills SA

Aromas of baked goods and yeasty pastry with a hint of custard and lemon. The palate is smooth with a lovely soft mousse with flavours of almond biscotti, lemon and custard. Great length goes for days, very easy to drink.

"This wine of extraordinary complexity and grace is named after the owners’ and vignerons’ daughter, Chloe. Only the best parcels of fruit were carefully selected from the cool climate of the Adelaide Hills. This delicately crafted ‘Méthode Traditionelle’ Cuvée has gone through secondary ferment in bottle, hand riddled and disgorged after a minimum of four and a half years on yeast lees. With a blend of 60% Chardonnay and 40% Pinot Noir, this wine has wonderful toasty brioche aromas enhanced by green fruits and zesty citrus. The palate has a harmonious balance of orange blossom, biscotti and green apple that complement the slaty, driving minerality balanced perfectly with an elegant creamy finish."
