White peach, lemon with honey and almond, a delicate fennel perfume, subtle cinnamon spice. It’s tight and tangy, a fine chalky texture with saline umami things happening, almost has a bag of white mushroom character (but don’t mind me), a lot of crunch and green apple, with a pure and long finish, and maybe some salted lime and goats cheese tang in the aftertaste. Thirst quenching with so much energy and precision. Yes."
