Semillon Sauvignon Blanc but not as you know it.
A mix of skin fermented grapes in ceramic egg, combined with traditional foot crushed whole bunches. Naturally fermented then 12 months on lees in oak. Unfined unfiltered.
This is a work of art, it really sings. The lees ferment just creates this light chalky texture, the combination of Sem/Sauv Blanc drives wonderful aromas of lime and herbs (maybe there is a hint of aniseed...maybe not) but the Semillon takes over and generously provides layers of lime into a long dry finish.
